Happy National Blueberry Muffin Day!

I have been LOVING blueberry muffins lately, so when I decided to make a batch today, I had no idea it was actually a "holiday" until someone informed me that my plan was perfect for today! But how can you make muffins without, as my cousin once said years ago, "adding rolls to the bakery" so to speak?

First, you watch the size of the muffins. I make some regular tin sized, some in the shape of a heart, and some mini. That way, depending on my hunger level and what else I have eaten that day, I can decide which to eat, which to serve, and which to keep in the refrigerator for another day (a must since without preservatives these WILL go bad in a few days if left out!). 

Second, you make sure the ingredients are nutritious! If you have a couple of ingredients in there that aren't "healthy," like a little sugar, that's okay as long as the quantity is low and the main ingredients are really great. 

I've made these muffins several different ways because I like to change things up a bit :)

For example, last time I made them, a few weeks ago, I used 2 different types of gluten free flours and 1 type of oats. This time, I used 1 type of gluten free flour and 2 types of oats. I also added Vital Proteins Collagen vanilla powder and Ancient Nutrition Bone Broth chocolate powder into the muffins today, so those additions definitely changed the flavor. One MUST is using fresh organic blueberries...I wouldn't even try the frozen. 

They take about an hour to make, but that's only because the oats should sit for a half hour in the beginning, so think of it as a quick prep and then a half hour of work.

Smiling Through Chaos Blueberry Oatmeal Health Muffins

Preheat oven to 400 degrees F. Spray muffin tins with coconut baking spray.

Soak 1 packet of Glutenfreeda Gluten-Free Oats and 1 cup Bob's Red Mill 8 Grain Hot Cereal in 1 cup unsweetened flax milk in a bowl for 30 minutes.

Combine 1/2 cup packed organic brown sugar, 1tb raw honey and 1tb white gold honey, 1tsp vanilla extract, 9tb egg whites from the egg white carton (or 2 large egg whites if using from eggs), 1tb Sunfood coconut oil, and 1 packet of GoGo Squeeze Great'Full Grape applesauce (made from apple, sweet potato, grape puree concentrate, apple juice concentrate, and lemon juice concentrate). Mix well.

In another bowl, combine 1 cup West Point Naturals Light Bean Flour Mix, pinch of sea salt, 1tsp baking powder and 1/2tsp baking soda, 1 scoop bone broth powder, and 1 scoop collagen powder (see above for brands I use)

Pour honey mixture into bowl of oats and mix. 

Slowly add the flour mixture in, followed by organic blueberries (You decide how many - I like a large carton full).

Using a colander, add mixture into muffin tins and bake for about 20 minutes. Yummo!
