Mother's Day Wellness
Yesterday I celebrated Mother's Day in every way I could. I breathed in nature, I spent time with and told my children I loved them, I played Catch, Pick Up Sticks, Memory and marbles with my son (3 out of 4 are favorites of mine), I ate delicious and antioxidant-filled food, and I laughed with my mother. I thought about what an honor it is to be their mother and to be my mother's daughter, and what a privilege it is to have a beautiful, healthy, unique family.
We started out our day with...pancakes!
I made 2 types of pancakes, one with oats, banana, and protein powder, and the other with frozen organic blueberries and chocolate. Bonus for those of you with intolerances: both are gluten and dairy free!
Smiling Through Chaos Protein Pancakes
- 1 organic egg
- 1/2 cup unsweetened Blue Diamond almond cashew blend milk
- 3 tb Sunfood vanilla protein powder
- 1/3 cup organic steel cut oats
- 2 tb coconut flour
- 2 tsp apple pie spice
- 1 tsp almond extract
- 1 tsp baking powder
- 1/2 banana (We used frozen since we didn't have fresh and just allowed it to sit a bit longer before mixing it - worked fine!)
- 1 tb Nutzo Peanut Pro organic nut butter
Blend all ingredients. Spray pan with coconut oil spray. Pour into mini pancake placements in your pancake pan (or use a regular pan if you don't have a pancake pan).
Double the ingredients if you want at least 10 pancakes. We wanted to make fewer of these and more chocolate pancakes for Mother's Day this year :)
Smiling Through Chaos Blueberry Chocolate Chip Pancakes
- 2 cups unsweetened Blue Diamond almond cashew blend milk
- 1 tb organic lemon juice
- 1 cup amaranth flour
- 1 cup fava bean flour
- 2 tb organic raw sugar
- 1 organic egg
- 2 tsp baking powder
- dash of salt
- 3 tb Earth Balance organic coconut spread (instead of butter), melted
- organic frozen blueberries
- dairy-free chocolate chips, such as the tiny chips from Enjoy Life (yum!)
Whisk lemon juice and milk in bowl. Whisk flour, sugar, baking powder with dash of salt into another bowl.
Add egg into bowl of melted butter and whisk. Pour milk into bowl and mix egg / butter mixture into the milk.
Pour milk mixture into middle of dry ingredients and mix until just combined (lumps are fine).
Spray mini pancake pan (or regular pan if you don't have one) with coconut oil spray, and pour pancake mixture onto pan. Add frozen blueberries and dairy-free chocolate chips.
Top with wild lingonberry jam, Manuka honey, and other toppings that will give your body extra antioxidants and your mouth extra flavor!
